If you want to escape the city atmosphere of crowded Kuta and Seminyak, try heading down to the Bukit. You can rent a guesthouse on the cliffs for a very reasonable price, in Bingin or Balangan among other places.
Here's what I reckon Chris and I will do, and what you might think about. Rent a Kijang, head north or east for 3 hours and check out a hotel / guesthouse. Stay a day or 2 exploring the area, checking out some hikes, asking locals for the nearest beaches and not spending all of our time either driving, or in the city. You can get to Singaraja on the north coast in 3 hours from Kuta and Lovina will be the area you'll probably want to stay, as there are hotels, guesthouses and restaurants.
When I explore Bali I always stop at local warungs and chat to the locals. They like to chat and many times a younger person will speak some English. Taking roads that are unmarked or not on the map is where I find the best stuff. For example, in downtown Ubud and along the main road heading to Tegalalang you will see all kinds of carvings. One time I was heading north from Ubud and took a right turn off of the road and for about a mile saw people sitting in little shacks at the side of the road actually making the stuff, that would be in some flashy art shop later.
