Seminyak offers many eating options, everything from local warungs where lunch will be 7,000rp, to western places with Italian lunch buffets to Japanese sushi. The nightlife starts late, but so many places are trying stuff, from movie nights, to party specials to importing foreign DJ's.
After a couple of days going through the list of nightspots any traveller will feel they have acclimated and probably be ready for some adventure. In my opinion your mode of travel is one of the biggest factors affecting the experience you will have. I hear the frustrations of people who come to Bali and either don't get out of Kuta or don't take my advice and do day tours. Bali is small and accessible, but you don't want to be driving from Kuta, to the north coast and back in the same day. Give yourself a chance to relax and explore. Driving out here, while weird, is easy and speeds are low. Okay you will get lost but that is no worries when people are friendly. Rent a car, car with driver or motorbike and create your own adventure, there are places to stay all over the island. I have traveled the world and usually never book a place to stay. Even in small villages you'll be surprised, the locals will know where the nearest accommodation is and sometimes a foreigner is running a cute guesthouse in the middle of nowhere.

Cody, welcome to Bali. I suggest using plenty of unscreen and wearing a long sleeve shirt if you ride a bike.
I’ll be out of town till monday and look forward to meeting you soon.
And get a real motorbike helmet. Don’t use one of those flimsy looking construction site helmets, like some locals would wear. Watch out for incoming cars straying into your lane when they try to pass other cars.
Hey Nick, Just got into Bali tonight and plan to take your advise ASAP and get a bike to do some exploring. I have no doubt i will get lost and probably go down some one-way streets the wrong way but that just adds to the adventure.
